I'm not exactly an engine guy, but it sounds to me like it could be
something other than carbs.
To check jetting, first warm the engine up to operating temperatures.
Then park your craft on a steep upslope you can't climb, and then run
wide open throttle (WOT from here on) for 20 seconds. Without letting
off the throttle, pull the kill switch tether. Take out the plug for
each cylinder and look at the color. If the color is a sort of
chocolate brown, everything is good. If it's black, you need smaller
jets and if it's white you need bigger ones.
The thing is, what you describe sounds more like an electric or fuel
supply problem.
Is the craft really wet when it dies? The solution for that is to get
some spray sealant (silicone spray, for example) and coat your plug
wires, boots, and any ignition-related wire.
If the problem is in your fuel supply system, you will run out whether
it's wet or dry. That could be a problem with bad hoses, or maybe a
partially clogged fuel filter.
