That's the system I plan to use; marine ply substrate with a plain
timber overlay.  I don't understand why you prefer varnish.
Polyurethanes are similar in appearance and more durable, less
maintenace. The epoxy is only a sealer for the timber, and no good as
a topcoat because of UV degration. Polyurethanes and varish can have
UV inhibitors which protect the expoxy.  It's virtually a lifetime
system with maybe a ten year maintenance cycle when exposed to
weather, inside possibly no maintenance.
